Oatmeal Cake

Mom Andersen's 9 children request her Oatmeal Cake at almost every Birthday. It's warm, moist, and perfect with a scoop of vanilla ice cream.

Ingredients:
1 1/4 C boiling water
1 C quick oats

1 C sugar
1 C brown sugar
1 C (2 sticks) butter
2 eggs beaten
1 tsp vanilla
1 1/2 C flour
1 tsp soda, salt, & cinnamon

Topping:
1/2 C margarine
1/2 C brown sugar
3 Tbsp canned (evaporated) milk

3/4 C coconut
1/3 C chopped walnuts


Directions:
1. Pour boiling water over oats in a separate, small bowl and let cool.
2. Cream sugar and butter until smooth.
3. Mix beaten eggs and vanilla to cream mixture.
4. Sift flour, soda, salt, and cinnamon together in separate bowl from
wet ingredients.
5. Mix dry ingredients into wet mixture and add prepared oatmeal.
6. Pour batter into a greased and floured 9 X 13 inch cake pan
7. Bat at 350 degrees until done (Check it at about 30 minutes. It's
done when a toothpick inserted into the center of the cake comes out
clean.)

Topping directions:
1. Cook margarine, brown sugar, and canned milk over low heat until thickened
2. Spread over the cooled cake3. Broil the iced cake 1-2 minutes
