Chinese Chicken Salad

Makes 8-10 side salad servings. My husbands constant request!
Salad Ingredients:
1 head romaine lettuce, torn
1 small head cabbage cut small
2 chicken breasts, cooked and cubed
1 cup sliced almonds, sugared
½ bunch green onions, optional
3-oz. pkg. chicken ramen noodles
With seasoning packet, divided
Dressing Ingredients:
1/3 cup olive oil or canola oil
3 TB sugar
2 TB red wine vinegar or white vinegar
2 tsp soy sauce
Ramen Noodle Seasoning Package
Dressing instructions: Combine oil, sugar, vinegar, soy sauce, and ramen noodle seasoning packet. Mix until sugar is dissolved. Set aside.
Sugared Almond instructions: Melt 3 TB butter in large fry pan. Add ¼ cup white sugar and mix until foamy and bubbly. Add 1 cup almonds and stir constantly until toasted, about 5 minutes. Spread hot almonds on wax paper to cool. Break into pieces.
Salad instructions: In large mixing bowl, combine lettuce, ramen noodles, chicken, almonds, and green onions. Mix dressing in just before serving.
