Slow Cooked Pork Burrittos

I thought this pork was very delicious and it doesn't have to be used for burritos. It has a mexican-food taste  to it and can be shredded or cut for any of your recipes. Here's what I used for my burritos.

1 boneless pork roast 3 lbs
1/4 cup reduced-sodium chicken broth
1 envelope reduced-sodium taco seasoning
1 tablespoon dried parsley flakes
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1 can (16 oz) refried beans
14 flour tortillas, 8 inch

Optional toppings: shredded lettuce, tomatoes, guacamole, sour cream, cheese, etc

1. Cut roast in half; place in slow cooker. In a small bowl, combine the broth, taco seasoning, parsley, garlic, pepper and salt. Pour over roast. Cover and cook on low for 8-10 hours or until meat is very tender.

2. Remove pork from crock pot and shred with two forks. Spoon beans and pork onto tortillas and top with your favorite toppings.

Serves 14 (1 burrito each). Prep time: 20 minutes. Ready in 8 hours.

Slow-Cooked Steak Fajitas















1 (1 1/2 lb) beef flank steak
1 (14.5 oz) can diced tomatoes 
1 jalapeno pepper, seeded and chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
1/2 teaspoon salt
1 medium onion, sliced
1 medium green pepper, julienned
1 medium sweet pepper, julienned
1 teaspoon minced fresh cilantro
12 flour tortillas
sour cream, optional
salsa, optional

1. Thinly slice steak across the grain into strips; place in a 5-qt slow cooker. Add tomatoes, jalapeno, garlic, coriander, cumin, chili powder, and salt. Cover and cooke on low 6 hours. Add onion, peppers, and cilantro. Cover and cook 1 hour longer.

2. Using a slotted spoon, spoon about 1/2 cup meat mixture into tortillas. Add sour cream and salsa if desired.

Makes 12 fajitas.

Beef Stew

2 pounds stew meat cut into 1 inch cubes

1 onion, chopped

5 carrots, sliced

4 potatoes peeled, cut into bit size pieces

3 ribs celery, chopped

1/4 teaspoon oregano

2 bay leaves

2 beef bouillon cubes

1 cup water

1 large can tomatoes


1. In a large pot cook meat and onion in 2 tablespoons oil until brown. Add tomatoes, carrots, potatoes, and celery to meat.


2. Cover and simmer 1 1/2 hours. Can also be cooked in a crock-pot.


Can be done the day before, refrigerated overnight and reheated.


Serves 8.


Brown Sugar Chicken

2 pounds chicken 

1 cup brown sugar

2/3 cup vinegar

1/4 cup lemon lime soda

2-3 tablespoons garlic

2 tablespoons soy sauce

1 teaspoon pepper


1. Mix and pour over chicken in the crock pot. Cook on low 2-3 hours.


Ready in 3 hours. Serves 4-6.

Hash Brown Soup

“Another great crock pot soup.”


2 green onions, chopped

2 teaspoons canola oil

1 package (28 oz) frozen hash brown potatoes, thawed

2 cups milk

1 can (10 3/4 oz) reduced-fat reduced sodium cream of chicken soup

6 turkey bacon strips, diced and cooked

1/2 cup reduced-fat shredded cheddar cheese


1. In a small skillet, saute onions in oil under tender. 


2. In a 5-qt crock pot, combine the potatoes, milk, soup, and onion mixture. Cover and cook on low 6-7 hours or until heated through. Top each serving with 2 tablespoons bacon and 1 tablespoon cheese.


Ready in 6 hours. Serves 8.

Turkey Chili


“This can be made on the stove-top or in a crock pot on low for about 6 hours.”


1 pound lean ground turkey

1 cup chopped onion

1 cup chopped green pepper

2 teaspoons minced garlic

1 can (28 oz) crushed tomatoes

1 can (16 oz) kidney beans, rinsed and drained

1 can (11 1/2 oz) tomato juice

1 can (4 oz) chopped green chilies

2 tablespoons brown sugar

1 tablespoon dried parsley flakes

1 tablespoon ground cumin

1 1/2 teaspoons chili powder, add more if you want a spicier chili

2 teaspoons dried oregano

1 1/2 teaspoons pepper


In a large saucepan, cook the turkey, onion, green pepper and garlic over medium heat until the meat is no longer pink; drain.

Add remaining ingredients and cook for 25 minutes. 

Can add reduced-fat cheese, cilantro and green onions for garnish. Serve.

For crock pot, brown turkey in a skillet then add all of the ingredients into crock pot. Cover and cook for 6 hours.


Ready in about 35 minutes. Serves 6.
